Great Tasting Sauteed Cabbage with Shrimp


ingredients
1 small head of white cabbage, including outer green (2 1/2 lbs)
1 tbsp olive oil
1 lb medium sized shrimp, peeled and deveined
1/4 c thinly sliced carrots (like matchstick)
1/4 c chopped celery
1 onion thinly sliced
1/4 c chicken broth or shrimp paste (see note)
directions
  • cut the cabbage in half. slice it thinly around the core. discard the core.
  • in a heavy bottomed pot, saute onion with olive oil over medium high heat. add celery and cook for 5 minutes. stir in the shrimp. cook shrimp until dark pink.
  • add cabbage, carrots and the broth or shrimp paste
  • bring to a boil and simmer 5 minutes
  • remove from the pot and serve hot.
NOTE:
it may appear yucky...but you can buy the shrimps with heads. put shrimps heads in a mortal and pestle. pound heads until very smooth. add a tbsp of water and squeeze to get the juice. use the juice as seasoning.

Rock-A-Bye-Baby-Rack-A-Sweet-Lamb


ingredients
2 racks of lamb, scrape most of the fats but leave an inch on the meat
2 tbsp rosemary, minced
salt and pepper
1 tbsp paprika
5 garlic cloves, minced
1 tbsp white vinegar
a bunch of asparagus, grilled
5 pcs of carrots, grilled
2 pcs red skinned tomatoes, quartered and roasted
directions
  • pre heat oven to 450 degrees
  • in a food processor mince garlic, rosemary and vinegar
  • coat the lamb with vinegar mixture and drizzle with paprika
  • roast lamb for 20 minutes for rare and 25 minutes for medium rare
  • rest for 15 minutes before cutting into individual ribs and serve.
  • garnish with grilled asparagus, carrots and red skinned potatoes

The Finest Baked Ham with Pineapple and Cherries


ingredients
1 fully cooked smoked ham (14-16 lbs)
6 garlic, peeled
1 c light brown sugar
zest of one lemon
1/2 c pineapple juice
1 c pineapple chunks
1 small can of cherries drained
directions
  • pre heat oven to 350 degrees
  • in a food processor mince the garlic. add sugar, zest and pineapple juice. process until smooth.
  • pour the glaze over the ham and bake for one hour or until the glaze is well browned
  • garnish with pineapple chunks and cherries.

Delectable Noodle Kugel


ingredients
1 lb any curly egg noodles
6 large eggs
4 c half and half
1/4 c brown sugar
2 tsp vanilla essence
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1 c ricotta cheese
1 c golden raisins
1 c regular raisins
1 c crushed pineapple, drained
salt and pepper

directions
  • cook noodle according to package direction. drain and set aside
  • pre heat oven to 350 degrees
  • in a large bowl whisk eggs, half and half, sugar, vanilla, salt and pepper, cinnamon and nutmeg.
  • stir in ricotta, raisins and pineapple. add the noodles and gently blend all ingredients
  • pour the noodle mixture into baking dish. place the baking dish into a larger pan with hot water to come halfway up the sides.
  • cover with foil. bake for 45 minutes, then remove the foil and bake for another 45 minutes.
  • serve warm.

Teeny Weeny Spaghetti With Clams


ingredients
1 pack spaghetti, cook according to package direction
2 tbsp olive oil
2 tbsp butter
2 shallots finely chopped
4 garlic cloves crushed
2 1/2 lbs clams, scrubbed clean
1/2 c chicken broth
1/2 c fresh parsley
salt and pepper
grated zest of one lemon
directions
  • in a large pot, saute garlic with oil and butter.
  • cook until garlic is golden brown. keep an eye so not to burn.
  • add shallots and cook until transluscent.
  • pour in chicken broth and bring to a boil
  • immediately add the clams and cover. cook for 6 minutes or until all clams are opened.
  • add the cooked spaghetti. mix well with clams.
  • remove from heat.
  • sprinkle with parsley and lemon zest.

3 lbs red or white skinned potatoes or a mixture
1/4 c olive oil
1/2 tsp salt
1 tsp pepper
10 cloves garlic, minced

  • preheat oven to 450 degrees
  • cut the potatoes in quarters
  • in a large bowl, combine oil, salt and pepper and garlic

15 pcs cherry tomatoes, halved

directions
in a large saute pan, heat butter and olive oil
add onions and saute until soft. add asparagus, and tomatoes and cook for about 5 minutes.
add salt, pepper, pepper flakes of desired taste.
if very dry, add 2 tbsp water or chicken broth
sprinkle with parmesan cheese.
serve hot.

The Outrageous Turkey Meatballs in Tomato Sauce


ingredients
1/4 c seasoned bread crumbs
2 large eggs lightly beaten
2 tbsp whole milk or half and half
3/4 c grated parmesan or romano cheese
salt and pepper
1 lb ground turkey dark meat
2 c marinara sauce
directions
  • pre-heat oven to 400 degress
  • combine together in a bowl, bread crumbs, eggs, milk and cheese
  • season turkey with salt and pepper. go slow on salt
  • gently add the turkey to the egg mixture
  • shape the meat mixture into bite sized balls
  • if it is too dry add more milk
  • arrange meat balls in a baking dish and bake for 20 minutes or until golden brown
  • meanwhile, heat the marinara sauce in a pot. add the baked meatballs and simmer until the flavor blend about 10 minutes
  • can be served with your favorite pasta or can be served as appetizer.

1 lb pasta (penne, bow-tie or vegetable pasta)
2/3 c of the following vegetables, thinly cut into 2 inch long strip:
-carrots, zucchini, and yellow summer squash

3 c vegetable oil
2 c panko bread crumbs
2 tbsp dried parsley
1 lb clean squid, cut into rings
1 tsp hot chili sauce
2 eggs slightly beaten

1 c ketsup or marinara sauce
directions
  • in a large heavy frying pan, pour vegetable oil and heat over medium high
  • meanwhile, mix together in a bowl, eggs and hot chili sauce
  • in a separate bowl, mix panko bread crumbs and parsley.
  • season squid with salt and pepper
  • working in batches, toss the squid into egg mixture and then into the flour mixture
  • to coat generously
  • slowly add the squid to the oil and fry until crisp.
  • transfer the fried squid to a paper towel lined plate to drain

Edith's Dynamite Egg Salad


ingredients
1 doz organic cage free large sized eggs
2 tbsp regular mayonnaise
1 tbsp chopped dill
1 tbsp chopped scallion

directions
  • in a large boiling pot, with a tight fitting lid, place eggs and cover eggs with water by 1 inch
  • bring to a boil and cook for 10 minutes. no more no less.
  • cool the eggs under cold running water
  • peel the eggs and use cheese grater to mash the eggs
  • in a large bowl, mix mayonnaise, dill and scallion. add eggs to mayonnaise mixture and gently mix them together.
  • season with salt and pepper

1 lb boneless chicken breast, sliced
1 tsp minced garlic
1 med onion sliced
1 large vine tomatoes
1/2 c sun dried tomatoes, sliced
1/2 c chicken broth
1/4 c fresh basil leaves chopped
1/2 lemon, juiced
2 tbsp olive oil
salt and pepper
directions
  • season chicken with salt and pepper
  • in a medium saucepan, brown chicken with olive oil about five minutes each side
  • scoop out chicken from the pan and set aside
  • on the same pan, saute garlic and onion until soft.

  • add sun dried tomatoes, chicken, asparagus and chicken broth

ingredients
1 1/4 c uncooked elbow macaroni
1 1/2 whole milk
3 tbsp flour
2 c sharp cheddar cheese, shredded
1/4 c sharp cheddar cheese (for toppings) shredded
2 tbsp butter
1 tbsp oil
1/4 tsp nutmeg
a pinch of cayenne
1/8 tsp freshly ground black pepper

directions
  • cook pasta according to package directions. drain.
  • combine oil, butter and flour in a medium saucepan, and with a very low heat, stir with a whisk. add cayenne. cook for about 3 minutes stirring constantly.
  • add milk, cheese, salt and pepper. stir constantly until smooth.
  • add pasta. toss to coat.
  • put pasta in a baking dish and put on top 1/4 c shredded cheddar cheese.
  • bake in a pre heated oven 350 degrees for about 5 minutes or until the cheese melts.

The Ultimate Yummy Creamy Flan De Queso (Cheese Flan)

2 c sugar, divided
1 (8oz) cream cheese room temp
1/4 tsp salt
1 can (12 oz) evaporated milk
1 can (14 oz) condensed milk
6 eggs

  • in a round 9"x3 1/2" mold make caramel by placing 1 c sugar and melting it over medium high heat.
  • blend cream cheese, sugar, evap and condensed milk, eggs,vanilla and salt in a food processesor until smooth.
  • to eliminate bubbles, let it sit in the fridge (covered with a plastic wrap) for about an hour.
  • then put it in the mold with caramel and bake in baine marie in the oven at 350 degrees for an hour.
  • run a knife around flan to loosen, then invert onto plate.

Spare Ribs Galore!

2 lbs pork spare ribs
2 tbsp dark soy sauce
3 tbsp hoisin sauce
1 tbsp rice wine vinegar
2 tsp brown sugar
2 gloves garlic, crushed
1 tsp cayenne
3 bay leaves
directions

  • combine soy sauce, hoisin sauce, vinegar, sugar, garlic, cayenne and bay leaves.
  • use this to marinade ribs for one hour in the fridge
  • after an hour, place ribs in a pre heated 350 degrees F oven for 20 minutes.
  • remove.
  • slather ribs with BBQ sauce (directions to follow) wrap in foil and return to oven to bake for 1 1/2 hours.

1/2 lb shrimp, peeled and deveined
1 (14 oz) pack of tofu, drained and cut into 1/2 inch cubes
1 lb asparagus, trimmed and cut into 1/2 inch pieces
2 cups thinly sliced shiitake mushrooms
1 c chopped onion
1 tbsp fresh ginger, minced
1 tbsp garlic, minced
1/3 c low sodium soy sauce
2 tsp brown sugar
1 tsp hot chili sauce

directions
  • heat 1tsp oil and cook tofu for about 3 minutes until lightly browned. set aside.
  • heat another 1 tsp of oil and cook shrimp until pink in color.
  • add mushrooms, onion ginger and garlic.
  • cook 2 minutes or until mushrooms are tender stirring frequently.
  • add asparagus, cook for 4 minutes or until crisp tender.
  • add soy sauce, sugar and chili sauce. stir well.

Ingredients

Caramel
1 c sugar
2 tbsp water
1/4 tsp lemon juice

Custard
12 egg yolks
2 cans evap and condensed milk
1 tbsp vanilla
1 tsp lemon zest
1/4 tsp cinnamon

  • pre heat oven to 325 degrees
  • caramelize in medium heat sugar and water, stirring occasionally until sugar is dissolved.
  • swirl pan for even cooking. stop cooking when liquid turn golden. immediately pour the syrup into flan molds covering bottom and sides.
  • meanwhile, combine all custard ingredients.
  • stir lightly to prevent bubbles or foam forming.
  • strain slowly while pouring into caramel lined flan mould
  • cover moulds with foil.
  • put molds into a bigger tray filled with water, half of the moulds.
  • bake for about 1 hour.
  • to loosen flan, slide knife around mold.
  • place serving dish on mold and invert.
  • cool in the fridge for 2 hours before serving.

Incredibly Super Awesome Pork Roast Loin


ingredients
4lbs boneless pork loin roast
1/4 c chopped sage leaves
1/4 c chopped thyme leaves
1/2 c olive oil
3 tbsp all purpose flour
1/2 c apple cider vinegar
1 c chicken broth
salt and pepper
directions
  • pre heat oven to 325 degrees F
  • place the pork roast in a roasting pan
  • in a bowl, combine sage leaves, thyme leaves and olive oil. rub the pork with oil mixture and season with generous amount of salt and pepper
  • bake uncovered approximately 3 hrs or until internal temp is 150 degrees or depending on your desired doneness
  • remove the pork roast and rest for 10 min before cutting.
  • meanwhile, pour out the excess fat from the roasting pan and put it on the stove over medium high heat.
  • sprinkle flur into the hot pan juices, stirring constantly until light brown.
  • add cider and continue stirring.
  • pour in the chicken broth, boil and stir until sauce is thick.
  • pour sauce into the pork roast and serve.

Edith's Famous Pot Roast



ingredients
3-4 lbs boneless chuck roast
2tbsp worcestershire sauce
2tbsp cornstarch
1 c thinly sliced onion wedges
3 tbsp olive oil
3 cloves garlic, minced
salt and pepper
2 bay leaves
1/4 c red wine
1 c cream of mushroom soup
3/4 c beef broth
8 medium carrots cut into thirds
directions
  • preheat oven to 350 degrees F
  • rub roast with salt and pepper and sprinkle with cornstarch
  • heat oil in an ovenproof pot and brown roast searing it on both side until roast is golden brown. remove roast from the pot. in the same pot mix onions, garlic and carrots. put on top the roast.
  • combine mushroom soup, wine, worcestershire sauce, and beef broth into a bowl and pour over the roast
  • cover the pot with its lid and bake for 3-4 hours or until tender.
  • remove and discard bay leaves
  • transfer roast to a cutting board and slice thinly against the grain. cook's note: if gravy is not thick enough...remove meat in the pot...bring the gravy into a boil and thicken it by adding 2 tbsp cornstarch mixed with 1/4 c beef broth.

2 1/2 quick cooked chicken breast diced
1/3 c heavy cream
1 c fat free milk
2 tbsp all purpose flour

2 tbsp cider vinegar

  • prepare grill. spray with cooking spray.

1lb any kind of pasta of your choice
1lb medium sized shrimp, peeled and deveined
1 med red bell pepper cut into bite size pieces
leaves from 2 bunch of basil
2tbsp pine nuts
1 garlic clove, minced
1/2 c extra virgin olive oil
1/2 c grated parmigiano-reggiano
1/2 tsp lemon zest and 1 tbsp lemon juice
salt and pepper
directions:
  • prepare pasta according to package directions
  • in a blender, puree basil, pine nuts, garlic and olive oil
  • add cheese, salt and pepper and blend again.
  • meanwhile, saute the shirmp and red bell pepper in the skillet until shrimp is bright pink and cooked through.

Mixie Maxie Veggie


The following recipe is one of the oldest Filipino cuisine. I changed it a little bit to make it adapt to the taste of the New Yorkers. This recipe is good for 5 people.

  • in a large aluminum pot, combine 3 tbsp oil, onion, garlic, tomatoes, 1pc anchovy, ginger and jalapeno
  • put on top of this all the veggies followed by the remaining oil and anchovy.
  • cover the pot and bring to simmer about 20 minutes.
  • remove from fire.
  • mix all the ingredients.
  • serve hot.

Oh Captain, It's General Tso's Chicken


ingredients
4 tbsp cornstarch
1/2 c chicken broth
4 garlic cloves sliced
1 tbsp minced ginger
3 tbsp light brown sugar
2 tbsp soy sauce
1 tsp red pepper flakes
1/2 lb snow peas trimmed
2 large egg whites
1/4 c chopped scallions
1 lb chicken breast cut into bite sized
2 tbsp olive oil

directions
the sauce:
  • combine in a large bowl 1 tbsp cornstarch and chicken broth.
  • stir until smooth.
  • add garlic, ginger, sugar, soy sauce and red pepper flakes.
  • mix until smooth.
  • set aside
  • in another bowl, whisk egg whites, the remaining 3 tbsp cornstarch, pinch of salt and pepper. toss chicken to coat.
  • set aside.
  • heat 2 tbsp olive oil to a non stick skillet and add chicken.
  • cook until golden brown.
  • add sauce until thickened.
  • combine snow peas.
  • simmer for 2 minutes.
  • serve with brown rice and enjoy.

Adobo Face (Apologies to Chef Willy Aslanian)

Adobo is a worldwide famous Filipino cuisine. I've been cooking this dish hundreds of times
to almost all of my clients. And this is what they all say: Its dynamite!

ingredients
1/2 lb pork loin cut into bite size
1/2 lb chicken cutlets cut into bite size
1/4 c distilled vinegar
2 tbsp lite soy sauce
2 pcs bay leaves
1 tsp paprika
1/2 tbsp freshly ground pepper
1/4 cup crushed garlic
1/4 tsp dried oregano
1 tbsp extra virgin olive oil; this is what I used for this (click photo to buy):


directions
  • season with salt pork and chicken. marinade with vinegar, soy sauce and 1/2 garlic.
  • add bay leaves and oregano.set aside for 20 minutes.
  • in a dutch oven, put olive oil and saute the remaining garlic until golden brown.
  • add pork and chicken. set aside the sauce.
  • simmer and cover for 20 min.
  • add the sauce and paprika and simmer for another 10 min.
  • serve hot with brown rice and enjoy to the max.

Kookie Kookie Monster



ingredients

3 c Pillsbury all purpose flour
1 tbsp baking powder
1c brown raw sugar
1 c Landolake butter (room temperature)
1 tsp vanilla essence
1 large egg
1c dark chocolate baking chips (Hersheys)
1 c chopped roasted walnuts
a pinch of salt

directions
  • preheat oven to 375 degrees
  • mix flour, baking soda and salt.
  • add butter, sugar and mix until creamy. add egg and vanilla essence
  • mix the chips and walnuts.
  • drop a spoonful of the batter on an large ungreased cookie monster sheet 2 1/2 inches apart.
  • bake for 8 minutes...
  • cool down and enjoy the Kookie Kookie Monster
