Hasta La Vista, Pasta Primavera Y Primera Clase


ingredients
1 lb pasta (penne, bow-tie or vegetable pasta)
2/3 c of the following vegetables, thinly cut into 2 inch long strip:
-carrots, zucchini, and yellow summer squash
1 yellow onion thinly sliced
1/4 c olive oil
1 tbsp dried italian herbs
salt and pepper
15 cherry tomatoes, halved
3/4 c parmesan cheese
1/4 c white vinegar
directions
  • cook pasta according to package direction.
  • in a food processor, blend vinegar, oil, dried italian herbs, salt and pepper.
  • pulse until well-mixed
  • meanwhile, in a large salad bowl, combine all vegetables, tomatoes and pasta.
  • pour and blend well the vinegar mixture
  • you can add more vinegar depending on your taste
  • sprinkle with parmesan cheese and serve.
