- cook pasta according to package direction.
- in a food processor, blend vinegar, oil, dried italian herbs, salt and pepper.
- pulse until well-mixed
- meanwhile, in a large salad bowl, combine all vegetables, tomatoes and pasta.
- pour and blend well the vinegar mixture
- you can add more vinegar depending on your taste
- sprinkle with parmesan cheese and serve.

1 lb pasta (penne, bow-tie or vegetable pasta)
2/3 c of the following vegetables, thinly cut into 2 inch long strip:
-carrots, zucchini, and yellow summer squash
1 yellow onion thinly sliced
1/4 c olive oil
1 tbsp dried italian herbs
salt and pepper
15 cherry tomatoes, halved
3/4 c parmesan cheese
1/4 c white vinegar
