The Unbelievable Chicken with Asparagus and Sun Dried Tomatoes


ingredients
1 lb boneless chicken breast, sliced
1 tsp minced garlic
1 med onion sliced
1 large vine tomatoes
1/2 c sun dried tomatoes, sliced
1/2 c chicken broth
1/4 c fresh basil leaves chopped
1/2 lemon, juiced
2 tbsp olive oil
salt and pepper
directions
  • season chicken with salt and pepper
  • in a medium saucepan, brown chicken with olive oil about five minutes each side
  • scoop out chicken from the pan and set aside
  • on the same pan, saute garlic and onion until soft.
  • add tomatoes and cook for about 5 minutes
  • add sun dried tomatoes, chicken, asparagus and chicken broth
  • simmer for 10 minutes or until asparagus is cooked
  • turn off heat and add basil leaves
  • arrange in a dish. just before serving squeeze in lemon juiceserve with rice or pasta.

Amazingly Delicious Chicken Ala King


ingredients
2 1/2 quick cooked chicken breast diced
1/3 c heavy cream
1 c fat free milk
2 tbsp all purpose flour
1 shallot chopped
1 c sliced button mushrooms, thinly sliced
1 c frozen peas
1/2 c red bell pepper chopped
1 tsp chopped parsley leaves
1/2 tsp fresh lemon juice
1 tbsp butter
directions
  • saute shallot in butter in medium saucepan.
  • add heavy cream, flour and milk.
  • bring to a boil stirring constantly.
  • reduce heat and cook until thickenedstir in mushrooms, peas, bell pepper and chicken.
  • cook until veggies are tender about 3 minutes.
  • add parsley and lemon juice.
  • enjoy!

Finest Pineapple Chicken Salad


ingredients
1 lb chopped cooked chicken breast
2 tbsp light cream
1/4 finely chopped green onion
1/3 c sliced almonds toasted
1/4 c chopped celery
1/2 c matchstick-cut carrots
1/3 c light mayonnaise
1 tbsp worcestershire sauce
1/2 tsp garlic powder
salt and pepper to taste
1 (8oz) can crushed pineapple in juice, drained
8 romaine lettuce leaves
directions
  • combine all ingredients in a large bowl, stirring well.
  • season with salt and pepper.
  • serve with pita bread or any toasted bread or simply by itself with a fresh fruit of plate.

Jerky Perky Grilled Chicken Breast


ingredients
6 skinless boneless chicken breast halves
1/2 c diced yellow onion
2 tbsp cider vinegar
2 tbsp brown sugar
1 tsp dried thyme
1 tsp ground allspice
2 garlic cloves chopped
1 jalapeno chiles with seeds dized
1/2 tsp salt
pam olive oil cooking spray
directions
  • prepare grill. spray with cooking spray.
  • combine all the ingredients in a food processor and puree.
  • spoon mixture into a large Ziploc plastic bag.
  • add chicken to bag. sea. marinate in the fridge for 30 min.
  • remove chicken grom bag and sprinkle with salt.
  • place chicken on a grill rack and grill for 6 minutes on each side or until done.
  • serve with mashed potatoes.

Oh Captain, It's General Tso's Chicken


ingredients
4 tbsp cornstarch
1/2 c chicken broth
4 garlic cloves sliced
1 tbsp minced ginger
3 tbsp light brown sugar
2 tbsp soy sauce
1 tsp red pepper flakes
1/2 lb snow peas trimmed
2 large egg whites
1/4 c chopped scallions
1 lb chicken breast cut into bite sized
2 tbsp olive oil

directions
the sauce:
  • combine in a large bowl 1 tbsp cornstarch and chicken broth.
  • stir until smooth.
  • add garlic, ginger, sugar, soy sauce and red pepper flakes.
  • mix until smooth.
  • set aside
  • in another bowl, whisk egg whites, the remaining 3 tbsp cornstarch, pinch of salt and pepper. toss chicken to coat.
  • set aside.
  • heat 2 tbsp olive oil to a non stick skillet and add chicken.
  • cook until golden brown.
  • add sauce until thickened.
  • combine snow peas.
  • simmer for 2 minutes.
  • serve with brown rice and enjoy.

Adobo is a worldwide famous Filipino cuisine. I've been cooking this dish hundreds of times
to almost all of my clients. And this is what they all say: Its dynamite!

ingredients
1/2 lb pork loin cut into bite size
1/2 lb chicken cutlets cut into bite size
1/4 c distilled vinegar
2 tbsp lite soy sauce
2 pcs bay leaves
1 tsp paprika
1/2 tbsp freshly ground pepper
1/4 cup crushed garlic
1/4 tsp dried oregano
1 tbsp extra virgin olive oil; this is what I used for this (click photo to buy):


directions
  • season with salt pork and chicken. marinade with vinegar, soy sauce and 1/2 garlic.
  • add bay leaves and oregano.set aside for 20 minutes.
  • in a dutch oven, put olive oil and saute the remaining garlic until golden brown.
  • add pork and chicken. set aside the sauce.
  • simmer and cover for 20 min.
  • add the sauce and paprika and simmer for another 10 min.
  • serve hot with brown rice and enjoy to the max.
