Hearty Flavory Pasta with Veggies


ingredients
1 package of any pasta of your choice
1 bunch of fresh baby spinach (about 1 lb)
1 bunch of kale, roughly chopped
4 cloves of garlic, crushed and chopped
1 lb red and yellow cherry tomatoes
8 oz block of feta cheese, crumbled
2 tbsp butter
juice and zest of one lemon

directions



  • cook pasta according to package instructions and set aside.

  • in a big skillet, cook garlic with butter over medium high heat. keep an eye on the garlic so as not to burn...

  • add kale and spinach until wilted. add tomatoes and cook for 2 minutes.

  • turn the heat off and immediately add the zest and lemon juice.

  • toss pasta and sprinkle with feta cheese.

  • serve immediately.

Great Tasting Sauteed Cabbage with Shrimp


ingredients
1 small head of white cabbage, including outer green (2 1/2 lbs)
1 tbsp olive oil
1 lb medium sized shrimp, peeled and deveined
1/4 c thinly sliced carrots (like matchstick)
1/4 c chopped celery
1 onion thinly sliced
1/4 c chicken broth or shrimp paste (see note)
directions
  • cut the cabbage in half. slice it thinly around the core. discard the core.
  • in a heavy bottomed pot, saute onion with olive oil over medium high heat. add celery and cook for 5 minutes. stir in the shrimp. cook shrimp until dark pink.
  • add cabbage, carrots and the broth or shrimp paste
  • bring to a boil and simmer 5 minutes
  • remove from the pot and serve hot.
NOTE:
it may appear yucky...but you can buy the shrimps with heads. put shrimps heads in a mortal and pestle. pound heads until very smooth. add a tbsp of water and squeeze to get the juice. use the juice as seasoning.

The Best in the West Roasted Potatoes


ingredients
3 lbs red or white skinned potatoes or a mixture
1/4 c olive oil
1/2 tsp salt
1 tsp pepper
10 cloves garlic, minced
2 tbsp fresh parsley, chopped
directions
  • preheat oven to 450 degrees
  • cut the potatoes in quarters
  • in a large bowl, combine oil, salt and pepper and garlic
  • toss the potatoes until well-coated
  • arrange potatoes in a baking sheet and roast in the oven for one hour or until golden brown and crisp
  • remove the potatoes from the oven and sprinkle with parsley.

The Fabolous Sauteed Asparagus


ingredients
2 lbs asparagus, trimmed and slice into 2 inch piece
2 tbsp melted butter
1/2 tsp olive oil
1/2 c parmesan cheese
15 pcs cherry tomatoes, halved
1 large yellow onion, slice thinly
salt and pepper
1.2 tsp red pepper flakes
directions
in a large saute pan, heat butter and olive oil
add onions and saute until soft. add asparagus, and tomatoes and cook for about 5 minutes.
add salt, pepper, pepper flakes of desired taste.
if very dry, add 2 tbsp water or chicken broth
sprinkle with parmesan cheese.
serve hot.

ingredients
1 1/2 lb fresh spinach
1 1/2 lb cheddar cheese shredded
take 1/2 for the toppings
1 c parmesan cheese shredded
6 eggs
3/4 c heavy cream
salt and pepper
directions
  • boil spinach until wilted. drain.
  • add other ingredients
  • pour into greased pan
  • bake for 30 minutes at 350 degrees
  • take out and add cheese on top
  • bake again until cheese melts.

The Fiery Asian Shrimp with Tofu and Asparagus (Recipe Inspired by Chef David Bonom)



ingredients
1/2 lb shrimp, peeled and deveined
1 (14 oz) pack of tofu, drained and cut into 1/2 inch cubes
1 lb asparagus, trimmed and cut into 1/2 inch pieces
2 cups thinly sliced shiitake mushrooms
1 c chopped onion
1 tbsp fresh ginger, minced
1 tbsp garlic, minced
1/3 c low sodium soy sauce
2 tsp brown sugar
1 tsp hot chili sauce
1 tbsp olive oil
directions
  • heat 1tsp oil and cook tofu for about 3 minutes until lightly browned. set aside.
  • heat another 1 tsp of oil and cook shrimp until pink in color.
  • add mushrooms, onion ginger and garlic.
  • cook 2 minutes or until mushrooms are tender stirring frequently.
  • add asparagus, cook for 4 minutes or until crisp tender.
  • add soy sauce, sugar and chili sauce. stir well.
  • add tofu and cook for one minute.
  • serve with steamed rice, rice noodles or linguine.

The Flavory Garlicky Broccoli


ingredients
1 lb broccoli
1 tbsp olive oil
1 tbsp minced garlic
salt and pepper
1/4 tsp crashed red pepper
1/2 c chicken broth
1 tbsp lemon juice
directions

  • saute garlic in a large skillet until golden brown.
  • add salt, red pepper and broccoli
  • saute for 2 minutes
  • add chicken broth and lemon juice.
  • cover, simmer for 10 minutes or until tender.

Irresistible Roasted Asparagus


ingredients
1lb asparagus, trimmed
3 garlic cloves, minced
juice of half a lemon
salt to taste
1 tsp olive oil
1/2 tsp dried thyme
cooking spray
directions
  • preheat oven to 450.
  • spread garlic in the baking dish coated with cooking spray.
  • arrange asparagus in an even layer over garlic, drizzle with oil.
  • sprinkle thyem and salt over asparagus.
  • bake for 15 min or until asparagus is crisp tender. enjoy this irresistle healthy dish with any meat dish.

Mixie Maxie Veggie


The following recipe is one of the oldest Filipino cuisine. I changed it a little bit to make it adapt to the taste of the New Yorkers. This recipe is good for 5 people.

Ingredients
6 tbsp extra virgin olive oil
2 ripe vine tomatoes
1 med. yellow onion
2 cloves finely sliced fresh garlic
1 pc green jalapeno pepper (sliced thinly)
2 pcs mashed anchovies
1 c yellow squash cut into cubes
1 c eggplant cut into cubes
10 pcs baby okra
1 c string beans cut into 4cm
1/2 c bitter melon cut into cubes

Directions
  • in a large aluminum pot, combine 3 tbsp oil, onion, garlic, tomatoes, 1pc anchovy, ginger and jalapeno
  • put on top of this all the veggies followed by the remaining oil and anchovy.
  • cover the pot and bring to simmer about 20 minutes.
  • remove from fire.
  • mix all the ingredients.
  • serve hot.
