Saucy Salmon to the MAX!

ingredients:
1 lb Alaska Salmon
1/2 c basil
2 medium diced tomatoes
2 medium diced yellow onions
1 clove minced garlic
Kosher salt and pepper
2 tbsp Fairway Extra Virgin Olive Oil
or you can try this:


directions:
  • preheat the oven to 450 degrees F
  • rub salmon with salt and pepper.
  • saute onions, tomatoes, garlic until soft. turn off the heat and add the basil.
  • place salmon skin side down on a non-stick baking dish.
  • pour the sauteed onions, etc.
  • bake until salmon is cooked through about 12 to 15 min.
  • before serving...squeeze on lemon juice.
  • enjoy to the max...

I think i just might try doing this. I've been wanting to prepare salmon at home. I love salmon, i can eat it raw, smoked, baked, etc. It's rich in Omega 3 that's good for the heart and is known to lower bad cholesterol. It's also a very good source of protein esp for those who are advised against eating meat.
