Easy as 1-2-3 Pasta Y Pesto


ingredients
1lb any kind of pasta of your choice
1lb medium sized shrimp, peeled and deveined
1 med red bell pepper cut into bite size pieces
leaves from 2 bunch of basil
2tbsp pine nuts
1 garlic clove, minced
1/2 c extra virgin olive oil
1/2 c grated parmigiano-reggiano
1/2 tsp lemon zest and 1 tbsp lemon juice
salt and pepper
directions:
  • prepare pasta according to package directions
  • in a blender, puree basil, pine nuts, garlic and olive oil
  • add cheese, salt and pepper and blend again.
  • meanwhile, saute the shirmp and red bell pepper in the skillet until shrimp is bright pink and cooked through.
  • add the lemon zest.
  • set aside.
  • pour the pesto to the pasta.
  • add shrimp and bell pepper tossing gently.
  • sprinkle on top some lemon juice
  • serve immediately.
  • yummy yummy on your tummy
