The following recipe is one of the oldest Filipino cuisine. I changed it a little bit to make it adapt to the taste of the New Yorkers. This recipe is good for 5 people.
Ingredients
6 tbsp extra virgin olive oil
2 ripe vine tomatoes
1 med. yellow onion
2 cloves finely sliced fresh garlic
1 pc green jalapeno pepper (sliced thinly)
2 pcs mashed anchovies
1 c yellow squash cut into cubes
1 c eggplant cut into cubes
10 pcs baby okra
1 c string beans cut into 4cm
1/2 c bitter melon cut into cubes
Directions
- in a large aluminum pot, combine 3 tbsp oil, onion, garlic, tomatoes, 1pc anchovy, ginger and jalapeno
- put on top of this all the veggies followed by the remaining oil and anchovy.
- cover the pot and bring to simmer about 20 minutes.
- remove from fire.
- mix all the ingredients.
- serve hot.
