4 tbsp cornstarch
1/2 lb snow peas trimmed
2 large egg whites
1/4 c chopped scallions
1 lb chicken breast cut into bite sized
2 tbsp olive oil
directions
- combine in a large bowl 1 tbsp cornstarch and chicken broth.
- stir until smooth.
- add garlic, ginger, sugar, soy sauce and red pepper flakes.
- mix until smooth.
- set aside
- in another bowl, whisk egg whites, the remaining 3 tbsp cornstarch, pinch of salt and pepper. toss chicken to coat.
- set aside.
- heat 2 tbsp olive oil to a non stick skillet and add chicken.
- cook until golden brown.
- add sauce until thickened.
- combine snow peas.
- simmer for 2 minutes.
- serve with brown rice and enjoy.
