- in a large pot, saute garlic with oil and butter.
- cook until garlic is golden brown. keep an eye so not to burn.
- add shallots and cook until transluscent.
- pour in chicken broth and bring to a boil
- immediately add the clams and cover. cook for 6 minutes or until all clams are opened.
- add the cooked spaghetti. mix well with clams.
- remove from heat.
- sprinkle with parsley and lemon zest.
Teeny Weeny Spaghetti With Clams
ingredients
1 pack spaghetti, cook according to package direction
2 tbsp olive oil
2 tbsp butter
2 shallots finely chopped
4 garlic cloves crushed
2 1/2 lbs clams, scrubbed clean
1/2 c chicken broth
1/2 c fresh parsley
salt and pepper
grated zest of one lemon
