The Fantastic Mac and Cheese


ingredients
1 1/4 c uncooked elbow macaroni
1 1/2 whole milk
3 tbsp flour
2 c sharp cheddar cheese, shredded
1/4 c sharp cheddar cheese (for toppings) shredded
2 tbsp butter
1 tbsp oil
1/4 tsp nutmeg
a pinch of cayenne
1/8 tsp freshly ground black pepper

directions
  • cook pasta according to package directions. drain.
  • combine oil, butter and flour in a medium saucepan, and with a very low heat, stir with a whisk. add cayenne. cook for about 3 minutes stirring constantly.
  • add milk, cheese, salt and pepper. stir constantly until smooth.
  • add pasta. toss to coat.
  • put pasta in a baking dish and put on top 1/4 c shredded cheddar cheese.
  • bake in a pre heated oven 350 degrees for about 5 minutes or until the cheese melts.
