- in a round 9"x3 1/2" mold make caramel by placing 1 c sugar and melting it over medium high heat.
- blend cream cheese, sugar, evap and condensed milk, eggs,vanilla and salt in a food processesor until smooth.
- to eliminate bubbles, let it sit in the fridge (covered with a plastic wrap) for about an hour.
- then put it in the mold with caramel and bake in baine marie in the oven at 350 degrees for an hour.
- run a knife around flan to loosen, then invert onto plate.
