- pre heat oven to 450 degrees
- in a food processor mince garlic, rosemary and vinegar
- coat the lamb with vinegar mixture and drizzle with paprika
- roast lamb for 20 minutes for rare and 25 minutes for medium rare
- rest for 15 minutes before cutting into individual ribs and serve.
- garnish with grilled asparagus, carrots and red skinned potatoes
Rock-A-Bye-Baby-Rack-A-Sweet-Lamb
ingredients
2 racks of lamb, scrape most of the fats but leave an inch on the meat
2 tbsp rosemary, minced
salt and pepper
1 tbsp paprika
5 garlic cloves, minced
1 tbsp white vinegar
a bunch of asparagus, grilled
5 pcs of carrots, grilled
2 pcs red skinned tomatoes, quartered and roasted
